Homemade granola energy bars, healthy snack, top viewThe perfect go to snack for any time of the day when you need a little energy boost. They are full of goodness and have no gluten for those who are dealing with intolerances. Even my mum has approved of these tasty little bars! They are so quick to make, just let them sit in the fridge long enough for them to set and hold together. Hope you enjoy them!

Makes 9-10

  • 150 g, Oats
  • 2 tsp Vanilla essence
  • 30 gram, Organic Whey Protein Powder (optional)
  • 10g  Chia Seeds
  • 60 g, Organic Crunchy Peanut Butter (I got mine of Prozis)
  • 1 Tbs(20g), Honey
  • 50 g, Mixed Fruit and Nuts
  • 100 ml, Semi-skimmed Milk (or as needed)
  1. Mix the oats, whey (if you are using it), fruit & nuts and chia seed in one bowl
  2. Combine the vanilla essence, honey, peanut butter in a microwave-safe bowl and melt all the ingredients
  3. Place the wet ingredients in with the dry and mix,  add milk until they start to combine
  4. Spray a small glass dish or baking tray with a little oil to ensure the mixture does not stick when you try to remove them later
  5. Set it in the fridge overnight
  6. Remove – melt a little dark chocolate over the top for a tasty topping (if you want)
  7. Feel free to play around with toppings! (chocolate, nuts, seeds, fruit etc)
